I'd like to insert the pdf creation date into the footer and front page. Is this possible?

Prince won't do this, you need to add it to your document or style sheet before you run Prince. (Perhaps we need to add a date() function that can be used from CSS generated content? People would want to specify the exact date format to use, though...)
