Hi, thinking about purchasing PRINCE server version but would like to know if you have any idea of how many users could use PRINCE at one time. I've just seen this statement "Allows use of Prince on a server by any number of users"

Speed and memory requirements are highly dependent on the nature of the documents that you will be formatting, so I recommend using the free Personal License and testing Prince on your server with the workload that you expect.

Is the software multi-threaded? Will it benefit from dual or quad-core CPUs?

If you're just formatting one document, then a multicore CPU will not provide any benefits, but if you're running multiple instances of Prince in parallel to format many documents simultaneously then it should definitely help.
